Jam Jar Jam

Recipe created by Lynn Polito of Lynn’s Way of Life

INGREDIENTS:

  • 3 cups mixed berries (washed and stems removed)

  • 1¼ cup granulated sugar

  • ½ cup Jam Jar Sweet Shiraz

  • 1 tablespoon lemon juice

  • 2 tablespoon chia seeds (for thickening)

DIRECTIONS:

  1. In a medium saucepan, combine the berries, sugar, Sweet Shiraz, and lemon juice. Stir over medium heat until the sugar dissolves and the berries begin to break down, about 8-10 minutes.

  2. Use a potato masher or fork to mash the berries.  You can also use an immersion blender. Let the mixture simmer gently for 15–20 minutes, stirring often, until it starts to thicken.

  3. Stir in 2 tablespoons chia seeds and simmer for 5 more minutes. Jam will continue to thicken as it cools.

  4. Let the jam cool for 10–15 minutes, then transfer to a clean jar or container.

  5. Refrigerate for at least 2 hours to let the jam fully set. Store in the fridge for up to 2 weeks or freeze for up to 3 months.
